Is a ceiling hood better than an island hood?
Visually, yes: nothing hangs over the hob. Practically, no. It sits further from the hob, costs more and needs a suitable void. Island hoods suit most island kitchens.
What ceiling do we need?
Enough void depth for the unit and ducting, a route to outside, and access for servicing. On a concrete slab it usually is not viable.
How is it controlled?
Normally by remote. Check the remote is replaceable and keep a spare for a let.
